How to Make this Okro Soup
Ingredients
- 5 cups (250g) Okra
- 3 cooking spoons red palm oil
- Chicken or Beef depending on choice
- Shaki (Cow Tripe) (Optional)
- Fish: Dry Fish, Stock Fish
- 1 handful crayfish
- Pepper and Salt (to taste)
- Onions
- Pepper
- Vegetable: Nigerian pumpkin leaves or spinach (fresh or frozen)
- 3 stock/Maggi cubes
Directions
Boil the Chicken for about 30 minutes to cook and be soft
Then boil the stock fish to soften it, you can also boil with the meet at sane time
Then grate the Okro with a grater or chop to tiny little pieces, then also chop the vegetable leaves
You don't need to remove the chicken from the fire as you will just continue cooking with the meet stock, add the palm oil then add pepper and allow to boil for another 10 minutes
Add the cray fish and Onion allow for 5 minutes then add the Okro and vegetables
This is because you need the vegetable and Okro to be fresh, it doesn't need to cook too long
Add the salt and Maggi and allow to boil for another five minutes, food is ready to be served
You can serve with Fufu or pounded yam, your choice
