How to Cook Bitter Leaf Soup (Ofe Onugbo)

  This bitter leaf soup recipe (also know as Ofe Onugbu) is generously stocked with flavoursome meats, fish and cocoyams. Make it when you’re in the mood for something warm, serve with your favourite swallow, tuck in and enjoy. INGREDIENTS : ½ cup washed bitter leaf 4 medium cocoyams 10 medium size assorted meats 3 medium smoked or dry fish 1 medium size stock fish Ground dry pepper, to taste 1 tbsp. ogiri (locust beans) ½ cup ground crayfish 2 cooking spoons palm oil Seasoning/salt to taste METHOD : Peel, wash and boil the cocoyam till tender, then blend or pound in a mortar. Soak the stock fish in hot water to soften. Season and boil the assorted meat until tender then add the stock fish and dry fish and allow boiling for 10 minutes. Add the palm oil, ogiri, dry pepper, ground crayfish and cook for 3 minutes. Add the cocoyam paste and stir very well. (you can add more water if it’s too thick), allow cooking for 5 minutes.   Ingredients • Beef/ Chicken/lamb/turkey or your preferred protein • Stock fish • Smoked fish • Periwinkle (Optional) • Ground crayfish • Ponmo • Palm oil • Onions • Cocoyam or Achi ( Soup Thickeners) • Oha leaves (cut using a knife or shredding with your fingers) • Uziza leaves (chopped) • Seasonings • Salt • Water/Stock Preparation : 1. Put meat, kponmo and stock fish in a pot, add seasoning and onions, let simmer for 5 minutes, then put a little water, cover and let cook till meat is tender. 2. You can either add cocoyam while cooking the meat so it can cook together to save time or cook the cocoyam separately. 3. When it has cooked properly, add 2 cups of water then add palm oil, allow to cook for about ten minutes. (Remove cocoyam and pound in a mortar or blend using a blender or a food processor) 4. Efo Riro: A Yoruba Delicacy Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute. Ingredients for Efo Riro Assorted meat and fish. use a combination of the following: Beef Shaki (cow tripe) Smoked fish Dry fish Stock fish 20 cl palm oil 500g Efo Shoko 5 tatashe peppers 2 tablespoons ground  crayfish 2 red onions 2 small stock cubes 2 tablespoons locust beans (iru) Salt &  Habanero / Scotch Bonnet peppers  (to taste) The following are the two vegetables that can be used in cooking Efo Riro. Ingredients for Ogbono Soup Assorted Meat and Fish: Beef,  Shaki (cow tripe) ,  Dry Fish ,  Stockfish 2 handfuls  Ogbono Seeds 3 cooking spoons red palm oil Vegetable: Frozen Spinach (you can also use Pumpkin leaves or even Bitterleaf) 2 tablespoons ground  crayfish Pepper and Salt (To taste) 1 onion 2 stock/seasoning/boullion cubes For grinding the ogbono seeds, you will need: A spice/coffer grinder. Before you cook Ogbono Soup Grind the Ogbono with a dry mill. Cut the frozen spinach when it is not completely defrosted. It is easier that way. Then when completely defrosted, squeeze out the excess water. Cook the assorted meat with the stock cubes and onion. If you will use Shaki, remember to start cooking that first, then add beef when almost done. Grind crayfish and pepper. Boil some water and set aside.
